What you'll need for the cake:
○ Egg yolks (5)
○ Sugar (250 g)
○ Carrots, grated (250 g)
○ Almond, ground or crushed (250 g)
○ Lemon, shell and juice (1)
○ Powder Yeast (1 tbsp)
○ Flour (80 g)
○ Egg whites (5)
○ Salt (1 pinch)



What you'll need for the glaze:
○ Powder sugar (250 g)
○ Lemon juice (3 tbsp)


The process:
1. In a bowl mix the eggs yolks and the sugar until it's light and fluffy.

2. Add the grated carrots, the almonds, and both the shell and juice of the lemon until combined.

3. Incorporate the flour and the powder yeast.

4. Preheat the oven to 180°C. In a separate bowl beat the egg whites with the salt.

5. Carefully add to the prior mixture .

6.  Grease a cake mold and sprinkle with a little bit of flour.

7. Pour in the batter and place it in the oven to bake for 50 Mins. or until a skewer inserted in the middle comes out clean.


8. Prepare the glaze by mixing the powder sugar and the lemon juice.


9. Allow the cake to cool before covering it with the lemon glaze.
