What you'll need:

○ Unflavored Gelatin (2 Envelopes)
○ Heavy Cream (200g)
○ Sugar (10 Tbsp - and a bit more for the coffee)
○ Instant Coffee (4 Tbsp)
○ Eggs (5)

Optional Extras:

○ Whipped Cream
○ Grated chocolate

The process.


1. Separate the egg whites from the yolks to bowls.


2. Dissolve the unflavored gelatin in cold water (you'll need 30ml of water every 7 grams of powder).

3. Whisk the heavy cream almost until it's whipped and take it to the fridge.

4. Add the instant coffee to a cup filled with hot water and then the unflavored gelatin and take it have it boiled. Once it reaches that point, remove it from the fire and add sugar (to taste).

5. Whisk the 5 egg whites to snow with 10 tbsp of sugar. When it's done, add one by one the 5 yolks, whisking firmly after each one.

6. Mix the result with the coffee and the whipped cream and pour into glasses to serve a fancy table.

7. Allow to cool in the fridge for 3-4 hours.

8. If you wish so, you can decorate the top with some extra whipped cream and grated chocolate.
